domino diserono sponge cake

We sort of made this up…

In primary school we use to have these delicious sponge cakes witch chocolate chips, they were amazing. I wanted to re-create this, so Del tried to figure out how to do it.

You will neeeeeed….

  • 175g caster sugar
  • 175g butter
  • 175g flour
  • 3 eggs
  • 4tbls hot chocolate
  • 2tbls milk
  • 200g icing sugar
  • 40g butter
  • disarono
  • and as many chocolate and white chocolate chips as you want.

Beat butter and sugar together until pale and fluffy. Add the eggs a little at a time, beating well after each addition. Fold in half the flour, using a metal spoon, then fold in the rest. Add the milk mixing it in. Divide the mixture in 2 and add hot chocolate to 1 lot. Then add WHITE chocolate chips to dark mix, and DARK chocolate chips to light mix.

Then pour into tins. Bake at 190 degreesC for about 20 mins.

When out and cooling, startthe icing. Soften the butter, and slowly mix in the icing sugar, a little at a time. Add a little milk when you feel the need. When icing is finished, add disarono!

 

It didn’t turn out exactly like it was in school, but ah well!

 

 

 

 

 

We ate it with half baked ben and jerrys ice cream. Twas goooooood! But EXTREMELY sweet!! 😀

Tripple chocolate peanut butter cookies, mmmmm!

Tripple chocolate peanut butter cookies, mmmmm!

Right, for these you will need
125g unsalted butter
140g brown sugar
1 egg, lightly beaten
185g peanut butter
150g plain flour
1/2 teaspoon bicarbonate of soda
25g unsweetened cocoa powder
175g white chocolate
175g dark chocolate

This was another recipe from our massive book!

Start by preheating the oven to 180 degrees C. We then
chopped the butter into smaller pieces so it was easier to
beat, we also microwaved it a little to help with that again
Beat the butter and sugar together, then add the egg, with
a little flour, beat that…. we then added the peanut butter,
beat that until thoroughly mixed, add the rest of the flour,
and we used galaxy hot chocolate powder instead, and add
the bicarbonate of soda.

Put table spoons of the mixture onto a baking tray, and baked
for 20 minutes. Once baked, we left to cool over night,
and then melted the white and dark chocolate (milky bar
buttons, and christmas milk chocolate coins) and dipped
the cookies 🙂

They were pretty damn tasty!

Creamy Potato Casserole…..

SO……

where to begin?

We want to say thank you to our friend expo who got us our MASSIVE recipe book!

We found a recipe for creamy potato casserole….

 

Ingredients are:

750 g waxy or all-purpose potatoes

1 onion

125 g grated cheddar cheese

375 ml cream

2 teaspoons chicken stock powder

 

BUT Del doesn’t like  onions, SO we used chicken instead!

 

So the above recipe, with 3 chicken breasts in stead of 1 onion.

 

How to make it, BASICALLY, peel the potatoes and then slice them, (we used a knife, the slices were quite thick and were still a little bit undercooked, the book recommends using a mandolin to help with this, we will be investing in one for next time)

 

Cut the chicken into quite small cubes, and fry in your preferred ….substance….? We used that flora cuisine stuff, it is quite good!

 

When you have peeled and sliced your potatoes, start to layer them in a large casserole dish (Del was peeling and layering the potatoes as i was chopping and cooking the chicken) Once you have enough chicken for the “next layer” sprinkle some cheese on, and then another layer of potatoes….. then some more chicken, cheese, and another layer of potatoes…. yada yada.

 

When all this is done, add the chicken stock to the cream, and whisk until “the mixture is thoroughly combined” and when it is, pour over the layers, and add more cheese…..

 

Place casserole in oven, pre-heated to 180 degrees C, for 40 minutes…..

 

 

 

This is how ours came out, and it was delicious. Second helpings were had 🙂

 

We totally recommend this recipe! If we can make it, anybody can! 😀
